The morning comes too soon
No sweat – I can wake up
Guest stayed overnight
Brew coffee – serve breakfast
Start the day off right
Guest is gone and
I’ve made my way
Clear through blogosphere
Hubby is watching a Netflix pic
And it’s time to cook again

Beef stew meat – let’s see
Irish beef stew – why not
Missing a few ingredients
So what – make do – carry on
Brown meat in oil and butter
While chopping garlic
Now slice a Jalapeno pepper
(I know the pepper’s not on the list
But I want my jalapeno pepper)
Toss in the garlic and pepper
Sautee it for a minute
A minute
Hurry
Open cans – No – stop
Stir the pot –
Now open cans and add
Four cups of beef broth
One cup of red wine
Don’t have red wine
One cup of white wine will do
No Guinness beer either – oops
Substitute – another cup of wine
Slow down now
Take your time
Tomato paste
Two tablespoons
Dried thyme don’t have
Ground thyme will do – use less
Add Worcestershire sauce
Two bay leaves and a splash of sugar
Heat and simmer for an hour

While it simmers
Peel potato AND turnips
I know it says potatoes but
I have to cook my turnips
Wash and slice the carrots
Chop onion – turnips – and one potato
Sautee these vegetables
In a separate pan
Until they’re nicely browned
Now set them aside
When the meat is tender
Add those browned veggies to the stew
Simmer for another 40 minutes
Or until the veggies are tender too
Garnish with parsley if you choose
Salt and pepper and serve

I like the way you cook ~ “do what you can with what you have where you are.”
When we became vegetarians, this is what I did with all my favorite recipes. Swapped out the meat and replaced it with vegetables, grain, or beans. More fun that following somone else’s recipe. 🙂

Thank you for dropping by, Nancy. Yes, it is a good way to cook. I found out, of necessity, that substitution almost always works and works well. I’d like to know what Irish Been Stew would have been like with the red wine and the beer, but I probably wouldn’t have made it at all if I’d waited to get all the ingredients. Did I tell you that I spent about six months being a vegetarian. I probably did. It was interesting. I bought cookbooks for vegetarian dishes. I may have stayed a vegetarian longer had I improvised by substituting ingredients on my old recipes. What a great idea! Blessings to you…

I have a sister impromptu cook! Why let one or two minor ingredients discourage us? Certainly not if we have a similar ingredient to use. I guess we learn by experience that cooking doesn’t have to be difficult. We learn as we go how to switch this and that without harming the end product. Stew is the perfect winter meal according to my husband. My favourite is soup, but both are hearty cold weather sustenance. I love how you blended the recipe into poetry… a double feast. 🙂
